Air Fried Squash Fries

Craving something super crisp without all the fats the Air Fried Squash Fries is the answer. This super crisp vegetable fries don’t have all the carbohydrates and very small amount of oil. The secret is in how you fry the squash. Using air fryer really works, set at 400°f in about 12 minutes gets super crisp vegetable fries. The second trick is the breading, just air frying squish will not come out very crisp. To achieve great crisp coating by using panko breading along with some parmesan cheese, season flour and beaten eggs. With a few sprays of canola oil using EVO sprayer in hot air fryer, be sure to shake basket a few times while it’s air frying. These air fried squash fries are so good and crisp it will satisfy your cravings. Enjoy

Ingredients
Squash Fries
  • 8 ounces butternut squash peeled, cut into fries
Breading Ingrdients
  • 1 cup all-purpose flour
  • 1 tsp creole seasoning
  • 2 large eggs beaten
  • 1 cup panko breading
Air Frying
  • 3 sprays canola oil using EVO oil sprayer

Instructions
  1. Cut butternut squash right where seeds pod starts, that's about in half. Peel the tough skin off squash with heavy duty peeler.
  2. Cut the peeled squash into French Fry Cuts 1/4 inch by 1/4 inch by 3 inches long.
  3. Combine together the flour and creole seasoning whisking until combined in bowl.
  4. Beat eggs with whisk until foamy, in another bowl.
  5. Place the panko breading in another bowl.
  6. Set up breading station first bowl season flour mixture, second bowl beaten eggs and last bowl with bread crumbs mixture.
  7. Dredge the squash fries in season flour a few at a time in season flour, shake off excess flour and place them into the beaten eggs. Coat squash fries with eggs then shake off excess eggs, then dip the fries into panko bread mixture coat well.
  8. Place the coated squash fries onto tray to dry for few minutes. Continue coating the rest of the squash fries in the same manner. This should take a few minutes. Note use the right hand for dry ingredients and left hand for wet ingredients. This way breading will not stick to your fingers as much. Wear disposable gloves for easy handling.
  9. Heat your Air Fryer to 400° for about 2 minutes. Place breaded squash in air fryer basket, spray 1 to 2 times with EVO oil sprayer. Then place another layer of squash fries and spray again with EVO oil sprayer. Note do not over crowd the fryer basket with fries. Fill basket only 1/2 way full.
  10. Place filled basket in air fryer and set it for 12 minute. At about 6 minutes pull basket out of the air fryer and give basket a good shake. Tossing fries around so brown better on all the sides. Continue to air fry for another 6 minutes.
  11. When squash fries are done hold in warm oven, as you make more fries. Serve with fat-free ranch dressing. .
Recipe Notes

These crispy squash fries would go great with ketchup or even better yet cranberry ketchup. This would pair well with Air Fryer Salmon.
