The challenging part is that fresh cranberries are very hard to find after the Holidays season. That’s because the growing season is just before Thanksgiving. Wisconsin is one of the biggest growers for cranberries since 1995. Who would thing that the cheddar heads produce so much cranberries about 57%. I grew up In Wisconsin and never realized that they even grown cranberries. But this was in 60’s and a lot has changed.
To the solve problem of finding fresh cranberries on off season was to substitute dried cranberries. Working with dried cranberries gives you a different outcome so some adjustments needed to be made. First problem is the wonderful color missing cooking with dried cranberries. Remembering past using raspberry gelatin as flavor enhancer and thickener would be wonderful start. This time using sugar free raspberry gelatin to reduce calories and still have some sweetness to Cranberry Sauce Apple Oranges recipe. The result was perfect by adding just half of a package of gelatin mixture achieving just the right color and flavor boost.
Finally to adjust sweetness to sourness in Cranberry Sauce Apples Oranges by adding some Stevia Sweetener. Just 3 to 4 packets will do the trick. The taste was almost as good as using fresh cranberries, far better then the canned alternate.

Ingredients
- 1 Tablespoons orange zest Zest of orange
- 1/2 Cup dried cranberries
- 1 Large orange Peeled and Diced
- 1 Large Apple Cored and Diced
- 1 Cup Apple cider
- 6 Packets Sweetner, stevia
- 1/2 Box jell-o raspberry sugar-free gelatin

Instructions
- Zest orange with microplane, note one orange should produce about 1 tablespoon of zest.
- Peel all the membrane off of orange using sharp knife, carefully removing all the membrane, then dicing orange into medium size pieces.
- Remove the core of the apple and dice into medium side pieces. Note I keep the skin of apple on to retain some of the nutrients.
- Gather all the ingredients needed to make cranberry sauce.
- Bring to boil in heavy sauce pan the dried cranberries, diced oranges, orange zest, diced apples and apple cider.
- Continue cooking the cranberry mixture for about 15 minutes on low heat. Note the cranberry mixture should just be boiling. Stir often so doesn't scorch on bottom of the pan.
- Add about 1/2 package of sugar free raspberry jello to cranberry sauce. This will improve the color and flavor profile.
- Next add sweetener to cooked cranberry sauce mixture. This will balance out the flavors, of sweet and sour profile.
- Stir over low heat to combine all the flavors for about 45 seconds. Taste Cranberry Sauce and adjust flavors with sweetener, lemon juice to balance sweet and sour profile.
- Place Cranberry Sauce in serving container.
