Fried Zucchini using an Air Fryer is a great way to have very crunchy fries. They also are lower in fat and have fewer carbohydrates. By using the Spiralizer to cut zucchini into long curls makes these wonderful fried zucchini so crunchy good. By using just a few spritz of vegetable spray, then Air Frying for 10 to 12 minutes, will come out super crunchy and golden in color. The secret is using Panko Breading to give the extra crisp and crunchy texture. Dipping these Fried Zucchini into some Ranch Dressing gives you a satisfying feeling, to those fried food urges without all that guilt.

Ingredients
- 2 large zucchini ends trimmed off
- 3 large eggs beaten
- 3 tbsp skim milk
- 1 cup all-purpose flour
- 1 tsp salt
- 1 tsp paprika
- 1 tsp garlic powder
- 1/4 tsp white pepper
- 3 cup panko breading
- 4 spritz vegetable spray
- 1 cup Hidden Valley Ranch Dressing

- Trim the ends off the zucchini and cut zucchini in half, to make it easier to spiralize.
- Set-up the spiraizer with large spiral blades. Fit one piece of zucchini into spiraizer and turn knob to form zucchini spirals.
- To set-up breading station for zucchini assemble 3 containers, one for panko breading, one for egg wash and one for season flour. Fill left container with panko bread crumbs, put all-purpose flour, salt, paprika, garlic powder and white pepper in middle container and stir well. Mix together milk and eggs in right container beat well to liquefy. To bread spiralized zucchini by first dredging into season flour mixture, and shake off the excess flour, then dip dredged zucchini into egg wash. Allow excess egg wash to drip off zucchini and finally dredge into panko bread crumbs and place onto clean plate or sheet pan. Note the breaded zucchini can be done ahead and kept in refrigerator or frozen so they are ready to fry.
- Place breaded zucchini into fryer basket, note do not over fill the basket, but put just enough to cover bottom of basket, do not crowd the basket with breaded zucchini. The zucchini fries very well in air fryer, but will not brown properly or get nice and crisp if crowded.
- Place fryer basket into air fryer, set the temperature to 400°F. To start the air fryer set timer to 12 minutes for the first batch. If you a make second batch set the timer to 10 minutes.
- When timer goes off, remove basket and place on a plate or sheet tray. Keep warm in 250°F oven or serve right away.
- When time of service place fried zucchini onto plate forming nice high pile and drizzle ranch dressing over top. Garnish with fresh herbs like dill ferns or parsley sprigs.

How would this work in the basket that turns?
The new PowerXL extra large has tumbler basket. You could put curly zucchini breaded fries in basket. First spray with oil. I like to use EVO sprayer with favorite oil. Close basket and air fry. Nice thing about tumble basket is you don’t have to shake basket as fries. You have experiment a little on timing. This could take from 10 minute up to 15 minutes to air fry. I am excited for you to have this new feature. Enjoy
