Fresh fruit yogurt salad was inspired by the new Weight Watcher’s zero points for non-fat plain Greek yogurt. The heart of this recipe is using yogurt to provide a tart and creamy dressing. Non-fat Greek yogurt is packed with 15 grams of protein which is add plus to fresh fruit yogurt salad. The goal was to create a near zero fruit salad, this all depends on what is added to create this wonderful tasting salad.
First starting off with good Non-fat Greek Yogurt it’s all a matter of preference choosing the right yogurt. In this recipe I used Chobani non-fat Greek Yogurt.
The next step is to build the flavors using twice amount of vanilla extract and half the amount of almond extract. This addition to the yogurt gives a good balance to the dressing profile. Still the yogurt dressing is very tart and needs some sweetness.
Choosing the right sweetener is important, choosing Stevia Sweetener is more natural, than using aspartame a very common choice. Stevia is plant base sweetener, that has natural sweetness in leaves without the carbohydrates. This works fairly well some say it has slight aftertaste. But with vanilla and almond extract is good counter balance, giving a good overall taste to the Yogurt Dressing.
The fresh fruit can be any combinations of berries, citrus and cored fruits. Choosing the best fruits for season that adds good colors, textures and flavors is wide open. This recipe uses apples, oranges, strawberries, blueberries, grapes and coconut flakes because they are available almost all year around. A final touch was to add some toasted coconut as garnish to give a extra end crunchy texture.

Ingredients
- 5.3 ounces plain low fat greek yogurt
- 6 packets Sweetner, stevia
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 cup fresh strawberry hulled and sliced
- 1 large apple, pink lady cored and diced
- 1 large orange peeled and diced
- 1 cup red seedless grapes quartered
- 2/3 cup Blueberries
- 1/3 cup coconut flakes
- 1/4 cup coconut flakes toasted as garnish

Instructions
- Gather non-fat plain yogurt, stevia sweetener, vanilla extract and almond extract.
- Put the non-fat plain yogurt, stevia sweetener, vanilla extract and almond extract in a mixing bowl.
- Stirring yogurt dressing mixture until combined well, using spatula.
- Wash the fresh fruit and dry on paper towels before cutting.
- Cut the grapes into quarters, slice cored strawberries, diced cored apples. Peel and remove the membrane of orange then dice. Measure 1/3 cup coconut flakes.
- Combine the blueberries, grapes, oranges, apples, strawberries and coconut with yogurt dressing in large mixing bowl.
- Stir the fresh fruit mixture until all the dressing coats fresh fruit yogurt salad.
- For family style service place fruit salad into serving bowl and garnish with toasted coconut flakes.
- For individual style service place fruit salad in glass and garnish with toasted coconut flakes.
