Cranberry Orange Coffee Cake

These coffee cakes where filled with all types of fillings, shaped into a wreath. I used my Mom's Swedish Bun recipe which is a very rich dough that is somewhat sweet. The filling is a cranberry jam freshly made with cranberries, apples and oranges with lots of sugar cooked into very thick consistency, then processed in a VitaMix until smooth. Then the Cranberry Orange Coffee Cake isĀ topped with Orange Glaze, garnished with nuts, white chocolate and dried cranberries. Wow what a wonderful way to use cranberries. It tastes so good I give it two thumbs up and my two big toes.[wpurp-searchable-recipe]Cranberry Orange Coffee Cake - A festive holiday wreath style coffee cake filled with a cranberry jam and garnished with nuts, white chocolate and dried cranberries. - Rich Swedish Dough: milk (scalded), unsalted butter, shortening, active dry yeast, water (110°F), sugar, bread flour, salt, sugar, eggs, heavy cream (scalded), bread flour, Cranberry Jam: fresh cranberries (washed), granny smith apple (cored and peeled then diced), orange (vested, peeled then diced), sugar, water, Coffee Cake Toppings: white chocolate chips, pecans (chopped), dried cranberries, unsalted butter (melted), Simple Syrup: sugar, corn syrup, water, Orange Glaze Frosting: confectioners sugar (sifted), orange (zest, juiced), butter (melted), Sponge for Rich Swedish Dough: Scald milk to 150°F with butter and shortening then cool to 90°F.; Hydrate dry yeast with sugar and warm water about 110 to 115°F for about 5 to 10 minutes.; Make a sponge mixture, scalded milk and first amount of flour. Mix to form a soft dough, cover and let raise until double in size.; Rich Swedish Dough: Mix together the sponge mixture with salt, sugar, eggs, heavy cream and remainder of the flour using dough hook on low gear for about 10 minutes.; Cover dough and let ferment for about 45 minutes to 60 minutes. Mean while mise en place the remainder of the ingredients.; Cranberry Jam: Bring to boil in heavy sauce pan the cranberries, diced oranges, orange zest, diced apples, sugar and water. Cook this mixture until cranberries pop and mixture becomes thick consistency. ; Place cooked cranberry mixture into VitaMix Blender and process first on low speed for 30 seconds, then on high speed until puree. Remove jam from blender into container. Note do not leave in blender when this mixture cools it forms a complete jell.; Simple Syrup: Bring to boil sugar, corn syrup and water in small sauce pan, cooking for 2 minutes. Set aside until needed.; Orange Glaze Frosting: Zest orange with micro plane into small container. Then juice the orange, discard the orange and save juice. Sift confectioners sugar into large bowl, add the orange juice and orange zest and whisk until smooth. Add melted butter and whisk again until blended into smooth frosting. Set aside for frosting/glazing coffee later.; Assembling Coffee Cake: Roll the rich dough into rectangle 18" to 24" long and 12" wide about 3/8" thick.; Brush butter onto dough, leave at least 1" of space on bottom edge of dough not covered. ; Spread over the buttered dough with cranberry jam evenly.; Sprinkle on top of cranberry jam, white chocolate chips, dried cranberries and chopped nuts.; Brush water on the bottom edge of dough using pasty brush.; Starting from top of the dough roll dough up into jelly roll fashion. ; With palm of hand seal bottom edge of rolled up dough.; Using bench scraper cut slots into dough leaving 3/4" space at top dough. Note do not cut all the way through.; Place dough onto prepared greased pan forming a ring. Then twisting cut slots one direction and then the other to form a star like wreath. There is a few different ways to make wreath this is one. After wreath formed sprinkle with white chocolate chips, nuts and dried cranberries.; Bake in 325° F convection oven for 20 to 25 minutes, use thermometer the dough should read 190°F to know it is done all the way through. ; Brush on simple sugar to glaze cranberry orange coffee cake.; Drizzle Orange Glaze Frosting all over Cranberry Orange Coffee Cake while still warm.; Sprinkle with white chocolate chips, nuts and dried cranberries to garnish Cranberry Orange Coffee Cake.; Cool on wire rack then cut into 10 to 12 slices of coffee cake.; - [/wpurp-searchable-recipe]
