Trim off from the boneless skinless chicken breasts the excess fat, cartilage.

Using meat tenderizer punch many times over the trimmed chicken breast with meat tenderizer. This puts hundreds of small cuts deep into chicken breasts.

Combine together the lemon juice, garlic, canola oil, salt and paprika in a mixing bowl. Whisking well all the ingredients to make a marinate.

Place the trimmed and tenderized chicken breasts into zip lock bag. Then pour the marinate over the chicken breasts into zip lock bag. Force all the excess air out of the zip lock bag and seal the bag. Or vacuum package marinated chicken just enough to remove all air out of the bag and seal.

Refrigerate the marinated chicken breasts for 30 to 45 minutes.
Garlic Lemon Butter:

Put softened butter, lemon zest, minced garlic and lemon pepper seasoning in a mixing bowl. Using a whisk beat all the garlic lemon butter ingredients together until well combined.

Place combined garlic lemon butter on sheet of plastic wrap, form a garlic lemon butter sausage shape by twisting both end tightly.

Refrigerate the garlic lemon butter log for 30 to 40 minutes. So log is nice and firm.

At time of Service remove from refrigerator and cut into slices.

Set the air fryer to 350°F for 20 minutes.

Add lemon juice, chicken stock to bottom of air fryer drawer.

Remove the garlic lemon chicken from zip lock bag, shaking off excess liquid; Place chicken breast onto basket of air fryer. Place basket into air fryer and start air fryer. Air fry chicken breasts for 20 minutes.

After 20 minutes check the internal temperature of chicken breasts if it reads under 165°F increase Air Fryer to 400°F and set timer for 6 to 8 minutes more time. Add thin sliced lemons on top of chicken breasts. Continue cooked for extra minutes set.

Strain the cooking liquid on bottom of the air fryer drawer into saucepan add extra lemon juice. Bring to boil the cooking liquid.

Combine together cornstarch and chicken stock, whisking until cornstarch is completely mixed into stock.

Pour cornstarch stock into boiling cooking liquid and whisk until thickened about 1 to 2 minutes. Bring this to boil for 1 to 2 minutes. Add the butter and whisk until incorporated. Adjust seasoning with salt, pepper if needed. Use this to pour over Air Fryer Garlic Lemon Chicken Breasts.
