It’s BBQ time, Spring is here flowers are popping out reaching for the sun. But there is something about the smell of smoke as lump charcoal heats up that puts a smile on my face. The cool spring morning doesn’t bother me as much, especially when preparing a Spicy BBQ Chicken Rub to go on chicken thighs while grill is heating up. Grilled Spicy BBQ Chicken

Why is Spicy BBQ ChickenRub so important, well it’s all about the flavor and keeping chicken nice and moist as it BBQ’s. So many wrap chicken with bacon, nice keeps moist, done that time for mixing it up a little. So thought came from making spicy rub into flavorful paste to rub all over the chicken thighs. So into the food processor went diced bacon making it into smooth paste. Then adding spices to achieve a good hot profile, but to my dismay it turned into thick paste that did’t what to rub onto the chicken. This great idea gone totally wrong, or is there a answer? Well I added soft unsalted butter which helped a little, especially the flavor, but still way too thick to rub nicely onto chicken thighs. The last attempt to salvage this creative idea was to add oil while processor is going until smooth soft workable paste will rub onto the chicken. It worked the Spicy BBQ Chicken Rub coated the chicken evenly, and ready to go onto indirect heated grill.

BBQ Chicken Rub directions
  1. Mise en place all ingredients for the Spicy BBQ Rub
  2. To make the BBQ Chicken Rub first process the bacon in food processor into paste.
  3. Then add to the bacon paste smoked paprika, cayenne pepper, chili powder, garlic powder, onion powder, white pepper, salt, continue processing bacon paste mixture. Note paste will become very thick.
  4. While paste mixture is processing add chunks of butter a piece at a time. This mixture should become more creamy.
  5. Then add the oil & honey while processing paste so the mixture will become workable spicy paste.
  6. Place the prepared Spicy BBQ Rub in container covered and labeled and refrigerated.
Rub the BBQ Chicken Thighs
  1. Remove bones from chicken thighs, trim excess fat and chicken skin. Apply a generous amount of BBQ Chicken Rub paste to each chicken thigh. Rub the paste evenly over each thigh. Refrigerate for 20 minutes. While set up grill or smoker.
Grilling BBQ Chicken
  1. Set up Grill to temperature of 325 to 350°F, add smoking chips or chunks. Place the Spicy Rubbed Chicken Thighs skin side up on grill using indirect heat. Put a drip pan this 12 oz of beer under grill grids. Close the lid of grill and cook chicken thighs to internal temperature of 165°F.
  2. When chicken thighs reach internal temperature of 165° remove from grill/smoker.
  3. Place Spicy BBQ Chicken Thighs onto platter. Cover with foil to rest for 5 minutes.
Recipe Notes

This rub can be modified to your spicy taste, by reducing or increase cayenne pepper,  Sriracha sauce and chili powder.
