But don’t tell them that there is green tomatoes in this snack cake. Just smile and say enjoy, as you are using up those green tomatoes.
Green Tomato Chocolate Snack Cake:
Who doesn’t love Chocolate Snack Cake just sneak in some green tomatoes. This is another great alternative to green tomato snack. Why not add some dark chocolate chips, giving extra chocolatey boost. Chocolate is all time favorites, it’s flavor profile works well with green tomatoes, the over notes disguises tomato flavor. The acidic green tomatoes acts as a tenderizer and adds a extra moist texture to snack cake.

How to prep the green tomatoes:

To process the green tomatoes first wash each of the tomatoes and drain well on clean towels. Next remove the core of tomatoes. Then set up food processor with smaller grate disk. Now process each of the tomatoes, into green tomatoes shreds. Place the shredded green tomatoes onto paper towels to absorb excess moisture.

Wonderful moist cake made with green tomatoes, having many different ways to make this snack cakes. This recipe is a core basic snack cakes with lots of creative variations.
Wash each green tomatoes and drain. Then trim the ends off each side of the tomato. This makes it easy to run through the food processor.
Usie the smaller shredding disk on food processor, aline the green tomatoes in shout, notice placing the tomatoes in smaller shout hole. Process the green tomatoes, pulling out any larger piece of tomato that doesn’t get shredded.
Place the shredded green tomatoes on paper towels to absorb excess moisture. Set aside while completing other recipe’s tasks.
Green Tomato Snack Cake Batter
Mise en place all ingredients needed for recipe plus add-in ingredients, like raisins, nuts. Pineapple pieces.
In stand mixer or mixer bowl place the eggs, oil and drained shredded green tomatoes. Use a flat beater or paddle attachment onto mixer.
Set the mixer on second speed and mix until all the wet ingredients are combined. Scrap the sides of the bowl down with spatula.
Add the 1/2 box of cake mix, spices and the molasses over the wet ingredients. Mix for 2 minutes on second gear, scrap down bowl.
Finally add to be green tomato batter, the add-ins, pineapple pieces, raisins, nuts and mix just until all is complete mixed into the batter.
Assembly, Baking Served
Spray baking spray into each well of jumbo muffin pan. Scoop green tomato cake batter into each well, distribute batter equally between the wells. Next make crumb topping using the other 1/2 box of cake mix, butter chunks and cinnamon.
Using hands work the cake mix butter chunks and cinnamon into fine crumbs mixture.
Sprinkle a good 2 tablespoons of crumb topping on top of rack cake batter. Note there will be some extra crumb topping that can be saved in ziplock bag and stored in the refrigerator for future toppings.
Bake tomato snack cakes in a 350 degrees oven for 35 minutes or until Testing with a toothpick that comes out clean. Remove from the oven and let rest for 5 minutes.
Remove green tomato snack cakes from wells of the baking pan and cool on a wire rack.
Serve warm on plate. Enjoy this moist snack cake with slightly tang.
Note these snack cakes freezes well, wrapped in plastic then foil for up to 3 months.
