Dark Chocolate Godiva Truffles is wonderful way to make handmade truffles. The key ingredients is using Godiva liqueur along with excellent couverture dark chocolate. This recipe only uses 5 ingredients takes only a few minutes to make ganache filling with Godiva liqueur.

Truffle centers filling:

The truffle center filling is often made with ganache which is chocolate, corn syrup, heavy cream, butter and flavorings. Many of the flavorings are liquors like Chocolate Godiva, Grand Mariner, Disaronno, Kahlúa. Using these different flavorings give each type of Chocolate truffles and whole new flavor profile.

The use of excellent quality dark couverture chocolate 65% is important in making chocolate ganache. The making of the ganache is simple process. First is to heat the cream, corn syrup to just a boil. Next adding the dark chocolate and butter to hot cream. Cover ganache for 5 to 6 minutes allowing chocolate to start melting. Whisk the chocolate ganache until a perfectly smooth consistency. Then finally pouring the liquor over chocolate ganache and whisk until combined. The chocolate truffle center filling is made. This mixture needs to rest in cool area covered for good period of time for the chocolate ganache to become firm. Leave the ganache to rest overnight, and process ganache filling to shape into round balls.

Coated with dark couverture chocolate. - Dark Chocolate Godiva truffle filling:: dark couverture chocolate (65%), heavy cream, corn syrup, unsalted butter, Godiva Chocolate Liquor, Dark Couverture Chocolate coating:: dark couverture chocolate, dark couverture chocolate (seeding), dark couverture chocolate (curls for garnishing tops), , Dark Chocolate Godiva Ganache Filling:: Mise en place all ingredients to make dark chocolate ganache truffles filling.; Pour heavy cream into heavy duty saucepan.; Add the corn syrup to heavy cream in saucepan.; Heat cream to just a boil.; Add the dark chocolate to hot cream mixture.; Cover the chocolate mixture with lid, turn off the heat. Let chocolate melt for 5 to 6 minutes with lid on.; After resting chocolate, remove the lid and add butter.; Start whisking chocolate ganache.; Whisking the ganache until completely smooth.; Adding Godiva liquor to the ganache.; Whisking the Godiva liquor into the ganache until completely smooth and combined.; Pour the dark chocolate Godiva ganache into bowl lined with plastic wrap. Cover ganache with plastic wrap.; Chill dark chocolate Godiva ganache for at least 4 hours or overnight.; Making Dark Chocolate Godiva Truffles:: Microwave on 50% just enough to slightly softened. Do not get the ganache too soft. ; Place in mixer filled with paddle attachment and beat.; Continue beating ganache until lightened.; Start scooping with 100# scoop. ; Scoop ganache onto sheet tray lined with plastic wrap.; Scoop all ganache truffles onto tray.; Fool each scoop of ganache truffles into ball with your hands.; When tempering machine reaches 108°F high melting point ready to set the tempering level. I choose setting two for longer tempering time. Produces best results. If your tempering chocolate need to get between 108 to 118°F melting point.; Next add 10% of weight on melted chocolate with chocolate pistols or chunk of chocolate. This is seeding chocolate to help proper crystallization of cocoa butter.; When chocolate reaches tempered level 88.8°F dip truffles into tempered chocolate using dipping fork.; Drizzle off the excess chocolate back into tempering machine. ; Drop dipped chocolate truffles onto parchment paper. Leaving room for each truffle to set up.; Before the chocolate totally sets sprinkle garnish onto top of chocolate. This time used chocolate shavings.; Allow all the dipped chocolate truffles chocolate coating to set up and become almost solid.; Trim the excess chocolate foot that forms on bottom of each truffle as cools.
